The story of Marina Beatriz Pérez chales is a beautiful story of a Guatemalan woman surrounded by family. Located in the region in Chanjon, Todos Santos Cuchumatan Huehuetenango, at an altitude of 1700 meters, Marina's family works together to help their father with his farm, El Sauco, where they grow high-altitude coffee, specifically parchment coffee. You can see their banana and lemon trees from their farm, where Caturra and Borbón coffee grows.

The family classifies cherry by means of receiving pile, it is pulped daily (in the afternoon), they allow the piles to ferment from 12 to 24 hours (depending on the temperature), washes in pile, and classifies damaged grains, pulp , and vain (float). By means of corotea, after washing, they dry the piles in the patio and on stretchers in the sun for 5 to 6 days of drying with a humidity in the range of 11 to 12%.
