About Finca Los Conejos

Finca Los Conejos Specialty Coffees was acquired in 2014 and is located in El Carrizal, a few kilometers north of Santa Rosa de Lima in Guatemala. The name, Finca Los Conejos (“The Bunnies”), comes from a very original story behind the farmlands. The farm was initially acquired as a family investment as a place to gather, appreciate nature, and play with bunnies. "The Bunnies" were pets that had to be sent to the farm so that they could be more comfortable and in a more appropriate environment. Children always wanted to visit their pets and the phrase “Vamos a Los Conejos” ("Let's go to the bunnies") was repeated every weekend, so it was from there that the farm takes the name Finca Los Conejos, allowing us to be easily remembered by our friends, suppliers, and customers with whom we hope to form strong and friendly long-term relationships.

When exploring the land in more detail, we discovered a coffee plantation and decided to seek advice to rescue that crop. After consulting with experts and taking different types of training, we made sure that the plants were well-nourished, with adequate fertilizers and foliar plants. We also invested in soil and water quality studies to provide the plant with the necessary nutrients and obtain the best fruits that coffee trees can produce.

Initially, there were 5 blocks of coffee plantations planted. Cherries were processed as natural coffee, 90% of which were Catuaí varieties and 10% were Bourbon, with which we have managed to achieve a very good cup profile. Later, we planted the Geisha variety and began to experiment with controlled fermentations for Natural and Honeys coffees. Our coffee archived scores higher than 86 and was rated top 10 of the best coffees in the region in the years that we participated in the Anacafé Regional Competition.

Our success so far has motivated us to continue to invest and innovate. To date, 18.75 blocks of different varieties -- including Geisha, Yellow Bourbon, Pacamara, and Mondo Novo -- have been planted to give better quality in the cup. In addition, we are experimenting with prolonged fermentation at different temperatures and with the Carbonic Maceration process in order to achieve unique flavors and more complex profiles that can be a remarkable characteristic of the specialty coffees of Finca Los Conejos.

We are now looking to produce specialty coffee on a larger scale and to sell Natural and Honey coffee in half or full containers with the quality that already characterizes the Finca Los Conejos coffees. Our goal is to guarantee our clients with Guatemalan coffee of the best quality with cup profiles in Natural and Honey.
