About Finca Chanita
The name of the farm is “Niña Chanita” because the Morales sisters' grandmother was called Luciana. The daughter of Claudia Morales, one of the owners of the farm, bears the same name. This represents a transmission of characteristics and denominations that is preserved between generations, resulting in a metaphor of its purpose with the cultivation of coffee.
The farm was established 30 years ago, when Claudia's father bought the property, starting the planting of coffee and native trees. One of his main objectives was to contribute to reforesting the municipality of Izalco and for the farm to become a lung for El Salvador. It is important to mention that the primary purpose was for the production and marketing of coffee to become an important component of the family economy.
Inside the farm, there are trees that were planted by Claudia and her sister. They believe that people need this forest to continue to have water and oxygen. By growing coffee, the forest is also strengthened, helping to conserve the native fauna and flora of the area. There is no water on the property, but the morning dew can be seen on the grass and leaves.
Her father is 80 years old, so Claudia and her sister have taken on the responsibility of working and managing the farm. Their enthusiasm is enormous because they have fallen in love with the cultivation of coffee. There are spectacular views on his farm, where the imposing Izalco volcano can be seen like a sleeping giant in front of the window. From 2 pm the clouds envelop the property while listening to the song of a great diversity of birds.
The coffee that is harvested is a source of pride for the Morales sisters. Sipping on a hot cup of the coffee they produce you can imagine the Izalco volcano and experience a wide range of flavors including chocolate, a bit of vanilla and citrus on the finish. This coffee mug conveys peace, tranquility and joy.
Claudia states that during the first five years of production magnificent yields were obtained, but later the rust invaded the coffee plantation, forcing the planting of resistant varieties. There is difficulty in accessing the farm because the street is dirt and irregular, extending for 10 km. As there is no transport for the workers, they have to be moved from the road. However, the biggest challenge Claudia has faced is taking charge of coffee production, having to acquire the knowledge required to achieve successful results. She has been helped by interviews with experts, has attended seminars and workshops, having completed the Diploma at the University of El Salvador, which covered all the stages of planting, cultivation, cupping, processing, and marketing.
On the farm it is difficult to obtain water, but Claudia has built reservoirs to minimize this lack. Currently, she is dedicated to having boards with organic coffee, to which organic fertilizers and earthworm cultivation will be applied.
